Great Carrot Cake

  1. 2 cups flour
  2. 2 cups sugar
  3. 2 tsp baking soda
  4. 2 tsp baking powder
  5. 1 tsp salt
  6. 2 tsp cinammon
  7. 4 eggs
  8. 1½ cups applesauce
  9. 4 cups grated carrots
  10. 1½ cups chopped walnuts

Sift together dry ingredients. Beat in applesauce and eggs until well blended. Stir in carrots and nuts. Pour into a greased and floured pan and bake at 350°F for 50-60 minutes.

Icing

  1. 1 stick butter, softened
  2. 8 oz. cream chese, softened
  3. 1 tsp vanilla
  4. ½ tsp almond extract
  5. 1–1½ lbs. powdered sugar

Beat first 4 ingredients until smooth. Gradually beat in powdered sugar until desired consistency.
